Cholesterol Fighting Vegetable Soup
Slimming World Friendly soup Packed with Fibre.
I’ve recently learnt about the importance of Fibre and its relationship with Cholesterol; it’s essential to eat Fibre to counteract Cholesterol being absorbed.
Cholesterol is a type of fat called a lipid that cannot be burned off with exercise; it is absorbed into the bloodstream and can clog up arteries.
The science of how this works is interesting and complex, but In essence, Fibre binds around Cholesterol in the small intestine, preventing Cholesterol from being absorbed into the bloodstream. It then carries it out of the body.
The British Heart Foundation ( bhf.org.uk) says that we need to consume 30g of Fibre per day. That’s a lot of Fibre!
My research has taught me that fruit and vegetables are packed with Fibre; it surprised me to learn that there is more Fibre in a pear (5g) than a serving of porridge oats (3.3).
Unfortunately, I’m not a fan of eating vegetables. But knowing about how important Fibre is for my weight loss journey, I’ve chosen to ‘hide’ the Fibre packed vegetables in a soup.
I make all my soups using a soup maker. It’s quick! I throw all of my ingredients into the soup maker jug with water up to the maximum line and switch it on. Twenty-one minutes later, I have a perfect soup.
I have written this recipe with a focus on Fibre content.
Leek and Potato Soup
Yields 4 large servings; Ingredients and Fibre Content:
X2 medium Potatoes with skins (average weight 400gms)6g
X2 large Leeks 6g
X2 medium white onions 3g
X4 Garlic cloves 1g
1 cup Broccoli 5g
1 medium pear or apple 5g
60gms Rocket 1.5g
800 mls water
X4 vegetable stock cube
Total fibre content =27.5g — Fibre per serving = 6.8g
